Carlos couldn’t find chicken broth at the store he want to so he had to get creative. He bought a premade (not the concentrated stuff — this was already thinned so you could eat it) cream of mushroom soup mix which we dilute with a little more water. We also used a cup of vegetable bullion. It worked and came out really delicious. Doing the stuffing in the Crock pot is definitely the way to go because it stays so moist.
Stuffing
- 2 cups finely chopped onions
- 2 cups finely chopped celery
- 1 small garlic cloves minced
- 1 apple, peeled
- 1 bay leaf, finely chopped/crumpled
- 1 1/2 teaspoon dried sage
- 3 cups liquid: 3/4 cup vegetable bullion, 2 cups dilute mushroom soup
- 4 cups oven-baked bread pieces (I set mine out in pieces the night before and then baked them to make them until golden brown)
- 1/4 cup melted butter
- 1 egg, well beaten
- Salt to taste if desired
- Freshly ground pepper to taste
- chopped walnuts if desired
Chop the onion, garlic and celery finely (t-mix made it easy) and saute in a pan. Add the sage, bay leaf and apple. Put the bread pieces in a large bowl and pour in the sauteed mixture, liquid, butter and salt and pepper and walnuts. Add the beaten egg last. Place in the crock pot and cook on high for 45 minutes-1 hour and then set on low for 4. Leave out enough stuffing for the bird and only stuff into the bird right before it goes in the oven.

- 2 lb (900 gr) turkey breast
- sliced ham
- slice smoked ham ( proscutto, serrano, etc).
- sliced cheese
- pepper
- red pepper slices (optional)
Slice the turkey meat so that it is about the same thickness all the way across. Then add a layer of ham, serrano ham, and sliced cheese across the turkey. Sprinkle on pepper and red pepper slices. Now roll the turkey up and hold in place by wrapping it in tinfoil. Bake for 60 minutes.

Thanksgiving turkey.... (ok, it's a chicken!)
We celebrated Thanksgiving yesterday on Saturday instead of Thursday because of our work schedules here in Denmark. When the feast did happen, we had delightful company (John from the US and Angela from Canada), conversation, and of course FOOD! Although we made a lot of food, I only felt stressed by it once (when I thought Carlos was tending the gravy but he was setting up the table) and I think that stress free way of preparing food always makes it come out better. Whenever I am rushed or stressed while preparing food for company it Never comes out the way I want it.
We made a variety of things: Stuffed chicken, Stuffed Turkey breast, stuffing, mashed potatoes, cranberry sauce, apple crisp, and chocolate chip cookies. John brought deviled eggs and sweet potatoes. Angela brought a whipped cream fruit salad and ice cream. Sorry about the whipped cream Angela! The t-mix does miracles, but it is also very powerful and before we realized what was happening, our whipped cream had turned to butter almost. It still tasted good but it was a shame it was clumpier than it would have been. Yes, there were only four of us here to eat all this food. Unfortunately our “mate” from New Zealand couldn’t make it. It was a delicious meal and in traditional Thanksgiving fashion we were stuffed!
